  • 3 cups frozen hash browns (thawed)
  • 6 slices thick-cut bacon (chopped)
  • 1 cup shredded sharp cheddar cheese
  • 6 large eggs
  • 1/2 cup whole milk or heavy cream
  • 1 small onion (diced)
  • Salt and pepper to taste
  • 4 tbsp unsalted butter (melted)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix thawed hash browns with melted butter, salt, and pepper. Press the mixture into a greased pie dish to form the crust.
  3. Cook chopped bacon in a skillet over medium heat until crispy (6-8 minutes), then drain on paper towels.
  4. In the same skillet, sauté diced onions until translucent (about 5 minutes) and set aside.
  5. Whisk together eggs, milk (or cream), salt, pepper, and half of the shredded cheese in a large bowl.
  6. Layer sautéed onions and crispy bacon over the hash brown crust, pour the egg mixture on top, then sprinkle with remaining cheese.
  7. Bake for 30-35 minutes until puffed up and golden brown.
  8. Allow to cool slightly before slicing. Serve warm.
