- 2 tsp Fresh Thyme, chopped (or 1 tsp dried)
- Juice of 1 Lemon
- Salt and Pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Wash and cut the Yukon Gold potatoes into uniform pieces.
- In a large bowl, combine potatoes with olive oil, garlic, oregano, thyme, salt, and pepper; mix until well-coated.
