  • 1 ¾ cups all-purpose flour
  • ¾ cup cocoa powder (Dutch-processed)
  • 2 cups granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans (toasted)
  • 1 cup brown sugar
  • ½ cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk flour, cocoa powder, sugar, baking soda, and salt until combined.
  3. In another bowl, mix eggs, milk, vegetable oil, and vanilla until smooth. Gradually combine with dry ingredients until a thick batter forms.
  4. Pour batter evenly into prepared pans and bake for 30–35 minutes or until a toothpick comes out clean. Allow to cool.
  5. For the frosting, combine coconut flakes, chopped pecans, brown sugar, heavy cream, and vanilla in a saucepan over medium heat. Stir for about five minutes until thickened.
  6. Once cakes are cool, stack with frosting in between layers and on top.
