- ¾ cup cocoa powder (Dutch-processed)

- 1 tsp baking soda

- 4 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans (toasted)
- 1 cup brown sugar
- ½ cup heavy cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease two round cake pans.
- In a large bowl, whisk flour, cocoa powder, sugar, baking soda, and salt until combined.
- In another bowl, mix eggs, milk, vegetable oil, and vanilla until smooth. Gradually combine with dry ingredients until a thick batter forms.
- Pour batter evenly into prepared pans and bake for 30–35 minutes or until a toothpick comes out clean. Allow to cool.
- For the frosting, combine coconut flakes, chopped pecans, brown sugar, heavy cream, and vanilla in a saucepan over medium heat. Stir for about five minutes until thickened.
- Once cakes are cool, stack with frosting in between layers and on top.
