  • 2 lbs Yukon Gold Potatoes, peeled and chopped
  • 1/2 cup unsalted butter
  • 4 garlic cloves, minced
  • 1 cup grated Parmesan cheese
  • 1 large egg yolk
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Boil Yukon Gold potatoes in salted water until fork-tender (about 15-20 minutes). Drain thoroughly.
  2. Return the drained potatoes to the pot; add butter, minced garlic, sour cream, Parmesan cheese, salt, and pepper. Mash until smooth.
  3. Stir in egg yolk until fully combined for color and richness.
  4. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Pipe or spoon tablespoon-sized mounds of potato mixture onto the baking sheet.
  6. Bake for 25-30 minutes until golden brown on top.
