Ingredients

  • 2 cups short-grain sushi rice
  • 1 can (5 oz) high-quality canned tuna, drained
  • 4 nori sheets
  • 1 medium cucumber, thinly sliced
  • 1 ripe avocado, thinly sliced
  • Soy sauce for dipping

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions (about 20 minutes) and let cool slightly.
  2. In a bowl, mix the drained tuna with a splash of soy sauce.
  3. Thinly slice the cucumber and avocado.
  4. On a bamboo mat or clean surface, lay out a nori sheet and spread an even layer of sushi rice, leaving an inch at the top.
  5. Place tuna, cucumber, and avocado along the bottom edge of the rice-covered nori.
  6. Roll tightly using the bamboo mat; seal the edge with a little water.
  7. Slice into bite-sized pieces with a sharp knife dipped in water. Serve with soy sauce.
