Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with parchment paper.
- In a bowl, mix crushed graham crackers with melted butter until crumbly. Press into the bottom of each muffin tin.
- In another bowl, beat cream cheese until smooth. Add sugar, vanilla extract, and eggs one at a time, mixing well.
- Fold in chopped apples and cinnamon into the cheesecake mixture.
- Spoon the filling into the prepared crusts and bake for 20-25 minutes until set.
- Allow to cool completely before removing from tins. Serve chilled or at room temperature.
