  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups apples (Granny Smith or Honeycrisp), sliced
  • 1 tsp cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs and melted butter until crumbly. Press into the bottom of each muffin cup.
  3. Beat cream cheese, sugar, eggs, and vanilla until smooth. Spoon over the crusts until three-quarters full.

  5. In a skillet, cook sliced apples with brown sugar and cinnamon until tender. Top cooled cheesecakes with spiced apples.
