- 1 lb baby potatoes, halved
- 2 ears corn on the cob, cut into 1-inch pieces
- 8 oz Andouille sausage, sliced
- 3 tbsp Old Bay seasoning
- 4 tbsp unsalted butter, melted
- Lemon wedges for serving
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine shrimp, potatoes, sausage, and corn. Drizzle with melted butter and sprinkle with Old Bay seasoning; toss to coat.
- Cut heavy-duty aluminum foil into sheets (12×18 inches). Divide the mixture evenly among the sheets and fold tightly to seal.
- Place foil packs on the prepared baking sheet and bake for 20-25 minutes until shrimp is pink and potatoes are tender.
- Carefully unwrap each pack (watch for steam), squeeze fresh lemon juice over the contents, serve immediately, and enjoy!
