  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 medium fresh sweet potatoes, peeled and cubed (2 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup low-sodium chicken broth
  • 2 tbsp honey or maple syrup

Instructions

  1. Peel and cube the sweet potatoes into bite-sized pieces.
  2. Season the chicken with salt, pepper, and thyme.
  3. In a skillet over medium heat, heat olive oil and sear each chicken breast for about 3-4 minutes per side until golden brown.
  4. Layer sweet potatoes in the bottom of the crockpot. Place the seared chicken on top and sprinkle minced garlic over everything.
  5. Mix chicken broth and honey (or maple syrup) in a bowl and pour over the ingredients in the crockpot.
  6. Cook on low for 6-7 hours or high for 4 hours until everything is tender.
