- 4 medium fresh sweet potatoes, peeled and cubed (2 lbs)
- 4 cloves fresh garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 1 cup low-sodium chicken broth
- 2 tbsp honey or maple syrup
Instructions
- Peel and cube the sweet potatoes into bite-sized pieces.
- Season the chicken with salt, pepper, and thyme.
- In a skillet over medium heat, heat olive oil and sear each chicken breast for about 3-4 minutes per side until golden brown.
- Layer sweet potatoes in the bottom of the crockpot. Place the seared chicken on top and sprinkle minced garlic over everything.
- Mix chicken broth and honey (or maple syrup) in a bowl and pour over the ingredients in the crockpot.
- Cook on low for 6-7 hours or high for 4 hours until everything is tender.
