Ingredients

Scale
  • 2 skinless salmon fillets (6 oz each)
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • 1 cup assorted fresh vegetables (bell peppers, cucumbers, snap peas)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp sesame seeds (for garnish)
  • 2 green onions (chopped, for garnish)

Instructions

  1. Rinse the rice under cold water until clear, then combine with water in a medium saucepan. Bring to boil, reduce heat, cover, and simmer for 15 minutes.
  2. While the rice cooks, heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper and place skin-side down in the pan. Cook for about 4 minutes until crispy.
  3. Carefully flip the salmon, add soy sauce and lemon juice to deglaze the pan, and cook for an additional 3 minutes until cooked through.
  4. To assemble, scoop rice into bowls, top with seared salmon and fresh veggies.
  5. Garnish with sesame seeds and green onions before serving.
