  • 1 lb ground turkey
  • 3 cups stale bread cubes
  • 1 cup dried cranberries
  • 1 cup chopped celery
  • 1 medium yellow onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup low-sodium chicken broth
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt butter or olive oil. Sauté the onion and celery until soft, about 5 minutes.
  3. In a large bowl, combine ground turkey, stale bread cubes, sautéed veggies, dried cranberries, parsley, eggs, and chicken broth. Mix thoroughly.
  4. Form the mixture into balls using about two tablespoons per ball and place on the baking sheet.
  5. Bake for 25-30 minutes until golden brown and cooked through.
