Description

Cowboy Caviar is a vibrant and delicious dip that combines colorful black beans, sweet corn, juicy cherry tomatoes, and crisp bell peppers, all tossed in a zesty lime dressing. Perfect for parties or casual snacking, this dish bursts with fresh flavors and textures.

Ingredients

Scale
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup fresh or frozen sweet corn
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1/4 cup fresh cilantro, chopped
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by rinsing the black beans and corn. Chop the cherry tomatoes, red onion, bell pepper, and cilantro into bite-sized pieces.
  2. In a large mixing bowl, combine the black beans, corn, tomatoes, red onion, bell pepper, and cilantro. Gently toss to mix.
  3. In a small bowl or jar, whisk together the lime juice, olive oil, salt, and pepper until well combined.
  4. Pour the dressing over the bean mixture and stir gently to coat all ingredients evenly.
  5. Cover the bowl or transfer to an airtight container and refrigerate for at least one hour to allow flavors to meld.
  6. Serve chilled with tortilla chips or as a topping for grilled chicken or fish.
