Couscous Stuffed Roasted Bell Peppers with Fresh Mozzarella is a vibrant and flavorful dish that brings the taste of the Mediterranean straight to your table.


Ingredients

  • 4 large bell peppers (red, yellow, or orange)
  • 1 cup couscous
  • 1 cup fresh mozzarella, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the tops off the bell peppers and remove seeds; sprinkle inside with salt.
  3. In a saucepan, bring water to a boil and add couscous along with a pinch of salt; cover and let sit for 5 minutes. Fluff with a fork.
  4. In a bowl, combine fluffed couscous, cherry tomatoes, mozzarella, garlic, basil, olive oil, salt, and pepper; mix gently.
  5. Stuff each bell pepper with the couscous mixture.
  6. Place stuffed peppers in a baking dish; drizzle with olive oil and cover with foil. Bake for 25-30 minutes until tender.
