- 4 large bell peppers (red, yellow, or orange)
- 1 cup couscous
- 1 cup fresh mozzarella, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the tops off the bell peppers and remove seeds; sprinkle inside with salt.
- In a saucepan, bring water to a boil and add couscous along with a pinch of salt; cover and let sit for 5 minutes. Fluff with a fork.
- In a bowl, combine fluffed couscous, cherry tomatoes, mozzarella, garlic, basil, olive oil, salt, and pepper; mix gently.
- Stuff each bell pepper with the couscous mixture.
- Place stuffed peppers in a baking dish; drizzle with olive oil and cover with foil. Bake for 25-30 minutes until tender.
