  • 1/2 cup fresh basil pesto
  • 4 slices artisan bread (like ciabatta or sourdough)
  • 8 oz fresh mozzarella cheese, sliced
  • 1 large ripe tomato, sliced
  • 2 tbsp olive oil (for drizzling)

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken with salt and pepper, place in a baking dish, drizzle with olive oil, and bake for 25-30 minutes until cooked through.
  2. While the chicken cooks, stir store-bought pesto or blend fresh basil leaves, garlic cloves, pine nuts, Parmesan cheese, and olive oil until smooth.
