- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- Pat the chicken breasts dry and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, sauté minced garlic until fragrant.
- Add heavy cream and chicken broth, stirring until combined.
- Stir in spinach and half of the Parmesan until wilted and creamy.
- Return chicken to the skillet, spoon sauce over it, top with remaining cheese, and bake for 15-20 minutes until bubbly.
