- 4 medium Yukon Gold potatoes (about 600g)
- 1/4 cup vegetable oil (60ml)
- 2 tbsp chaat masala
- 1/4 cup fresh coriander leaves, chopped
- 2 tbsp freshly squeezed lemon juice
- Salt to taste
Instructions
- Wash and peel the potatoes, then cut them into bite-sized cubes.
- Boil the cubed potatoes in water until tender but not mushy (about 10-12 minutes). Drain and let cool.
- Heat oil in a frying pan over medium heat. Test oil temperature with one potato cube; it should sizzle.
- Fry potato cubes in batches until golden brown and crispy (about 4-5 minutes per batch). Flip occasionally for even cooking.
- Remove fried potatoes and drain on paper towels. While hot, sprinkle with chaat masala, salt, and lemon juice.
- Garnish with chopped coriander leaves and serve warm or at room temperature.
