  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1 cup crushed Ritz crackers
  • 3 tbsp unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a medium-sized baking dish.
  2. Blanch the broccoli in boiling salted water for 3 minutes until bright green; drain and set aside.
  3. In a mixing bowl, combine the cream of mushroom soup with 1 cup of cheddar cheese. Stir in the blanched broccoli until well coated.
  4. Transfer the mixture into the greased baking dish and top with the remaining cheddar cheese.
  5. In a separate bowl, mix melted butter with crushed Ritz crackers and spread evenly over the casserole.
  6. Bake for 25-30 minutes or until bubbly and golden brown on top.
