  • 1 cup bell peppers (chopped, mixed colors)
  • 1 cup zucchini (chopped)
  • 1 cup fresh spinach (or ½ cup frozen, drained)
  • 1 medium onion (chopped)
  • 1 cup grated cheese (mix of cheddar and feta)
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Whisk the eggs in a large bowl until fluffy.
  2. In a skillet over medium heat, add olive oil and sauté onions until translucent. Add bell peppers and zucchini; cook until tender, about 5 minutes.
  3. Stir in spinach until wilted, then combine the sautéed veggies with whisked eggs along with half the cheese. Season with salt and pepper.
  4. Pour the mixture into a greased baking dish (9×13 inches) and top with remaining cheese.
  5. Bake for 25-30 minutes or until set and golden on top.
  6. Let cool slightly before slicing and serve.
