- 1 lb ground beef or turkey (lean)
- 1 cup panko breadcrumbs
- 3 green onions (chopped)
- 2 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey (for sauce)
- 2 tbsp rice vinegar (for sauce)
Instructions
- In a large bowl, combine ground meat, breadcrumbs, chopped green onions, minced garlic, grated ginger, and soy sauce until just mixed.
- Form the mixture into small meatballs (about 1 inch in diameter) and place on a baking sheet.
- In another bowl, whisk together honey, rice vinegar, soy sauce, and any remaining garlic or ginger until smooth.
- Pour half the sauce into the crockpot; layer in the meatballs carefully. Pour the remaining sauce over them.
- Cook on low for 6 hours or high for 3 hours until meatballs are cooked through.
- Serve with leftover sauce drizzled on top and garnish with extra green onions.
