Description

Skinnier Zucchini Bread is a deliciously moist and guilt-free treat that perfectly blends fresh zucchini with warm spices. Ideal for breakfast, brunch, or an afternoon snack, this recipe satisfies your sweet cravings without the extra calories. Enjoy it plain or spread with cream cheese for an added touch of indulgence.

Ingredients

Scale
  • 1 cup grated zucchini
  • 1 ½ cups all-purpose flour (or half whole wheat)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a bowl, whisk together flour, baking soda, cinnamon, granulated sugar, and brown sugar.
  4. In another bowl, beat eggs and vanilla until frothy; mix in grated zucchini.
  5. Combine wet and dry ingredients gently until just mixed—do not overmix!
  6. Pour batter into prepared loaf pan and bake for 50–60 minutes or until a toothpick comes out clean. Cool before slicing.
