  • 4 large eggs
  • 200g cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh herbs (basil or dill), chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place the block of feta in the center of the dish and surround it with halved cherry tomatoes.
  3. Drizzle olive oil generously over the feta and tomatoes.
  4. Season with salt, pepper, and additional herbs as desired.
  5. Crack the eggs gently over the feta and tomatoes.
  6. Bake for 20-25 minutes until the eggs are set but slightly runny. Serve warm, garnished with more herbs.
