  • 2 medium sweet potatoes (about 1 lb total)
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar (light or dark)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup sour cream (or Greek yogurt)

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the sweet potatoes, pat dry, and poke holes all over with a fork.
  2. Bake directly on the oven rack or on a lined baking sheet for 45-60 minutes until tender.
  3. Allow to cool slightly, then cut in half lengthwise and scoop out most of the flesh into a mixing bowl.
  4. Mix the scooped sweet potato flesh with butter, brown sugar, cinnamon, salt, and sour cream until smooth.
  5. Spoon the mixture back into each potato skin and return them to the oven for another 20 minutes until heated through and slightly caramelized.
