  • 1 cup fresh corn kernels (or frozen)
  • 2 salmon fillets (about 6 oz each)
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp fresh herbs (basil or parsley), chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter

Instructions

  1. Prepare the orzo by boiling salted water in a large pot. Cook orzo according to package instructions until al dente. Drain and set aside.
  2. In a non-stick skillet over medium heat, season salmon fillets with salt and pepper. Cook skin-side down for about 5 minutes per side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, melt butter and sauté fresh corn kernels for about 3 minutes until caramelized.
  4. Pour in heavy cream, bring to a simmer, then stir in Parmesan cheese until melted.
  5. Add drained orzo, lemon juice, and fresh herbs; mix well.
  6. Flake the cooked salmon into bite-sized pieces and gently fold into the creamy mixture.
  7. Serve on plates garnished with additional herbs if desired.
