- 4 large bell peppers (any color)
- 1 lb ground beef (or turkey/chicken)
- 1 cup cooked rice
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheddar cheese
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tsp oregano
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- Cut the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
- In a skillet over medium heat, sauté onions until translucent. Add garlic and ground meat; cook until browned.
- Stir in cooked rice, diced tomatoes, oregano, cumin, salt, and pepper until well combined.
- Stuff each bell pepper with the filling until overflowing. Top with shredded cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool slightly before serving.
