  • 4 large bell peppers (any color)
  • 1 lb ground beef (or turkey/chicken)
  • 1 cup cooked rice
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
  3. In a skillet over medium heat, sauté onions until translucent. Add garlic and ground meat; cook until browned.
  4. Stir in cooked rice, diced tomatoes, oregano, cumin, salt, and pepper until well combined.
  5. Stuff each bell pepper with the filling until overflowing. Top with shredded cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Let cool slightly before serving.
