  • 1 lb lean ground beef (80/20)
  • 4 medium Yukon Gold potatoes, sliced thinly
  • 1 medium onion, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp garlic powder
  • 1 cup low-sodium beef broth
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef with the chopped onion for about 5-7 minutes until fully cooked.
  3. In a large bowl, combine the cooked beef mixture with sliced potatoes, garlic powder, and half of the cheddar cheese. Pour in the beef broth and mix well.
  4. Transfer the mixture to the prepared baking dish. Top with dollops of sour cream and sprinkle remaining cheese on top.
