Ingredients

  • 1 lb beef chuck roast, diced
  • 2 cups carrots, sliced
  • 2 cups Yukon Gold potatoes, diced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef stock
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat oil in a large pot over medium-high heat. Add diced beef in batches until browned on all sides. Remove and set aside.
  2. In the same pot, add onions, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Stir in minced garlic for about 1 minute until fragrant.
  4. Return the beef to the pot with potatoes, thyme, bay leaves, salt, pepper, and beef stock. Bring to a boil.
  5. Reduce heat to low; cover with a slight crack for steam to escape. Simmer for at least 1 hour until everything is tender.
  6. Discard bay leaves and ladle soup into bowls.
