- 1 lb beef chuck roast, diced
- 2 cups carrots, sliced
- 2 cups Yukon Gold potatoes, diced
- 1 cup celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef stock
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat oil in a large pot over medium-high heat. Add diced beef in batches until browned on all sides. Remove and set aside.
- In the same pot, add onions, carrots, and celery. Sauté for about 5 minutes until softened.
- Stir in minced garlic for about 1 minute until fragrant.
- Return the beef to the pot with potatoes, thyme, bay leaves, salt, pepper, and beef stock. Bring to a boil.
- Reduce heat to low; cover with a slight crack for steam to escape. Simmer for at least 1 hour until everything is tender.
- Discard bay leaves and ladle soup into bowls.
