- 1 cup canned black beans, drained and rinsed

- ½ cup sour cream (for serving)
Instructions
- Preheat oven to 375°F (190°C). Halve the bell peppers lengthwise and remove seeds.
- In a skillet over medium heat, brown the ground beef until crumbled. Drain excess grease.
- Add taco seasoning and black beans to the skillet; mix in salsa. Stir until well combined.
- Stuff each pepper half with the meat mixture and top with shredded cheese.
- Place stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly.
- Allow cooling slightly before serving topped with sour cream.
