Ingredients
- 8 oz short pasta (e.g., rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced

- ¼ cup extra virgin olive oil
- 3 tbsp lemon juice (freshly squeezed)

Instructions
- Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and slice the red onion. Combine them in a large bowl.
- In a separate bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
