  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 2 tbsp olive oil
  • ½ cup buffalo sauce
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, toss chicken breasts with olive oil, garlic powder, paprika, salt, and pepper until well coated.
  3. Add sweet potato cubes to the bowl, drizzle with olive oil, salt, and pepper; mix until evenly coated.
  4. Arrange seasoned chicken on one side of the baking sheet and sweet potatoes on the other.
  5. Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F and sweet potatoes are fork-tender.
  6. In the last few minutes of cooking, drizzle buffalo sauce over the chicken; return to oven briefly until sticky.
