  • 2 medium sweet potatoes (about 1 pound)
  • 1 pound lean ground beef or turkey
  • 1 can (15 oz) canned chili beans (black or kidney)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup shredded cheddar cheese
  • Optional: 2 green onions, sliced for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil.
  2. Wash and pierce sweet potatoes with a fork. Place them on the baking sheet and bake for 45-60 minutes until tender.
  3. In a skillet over medium heat, cook ground beef or turkey until browned (7-10 minutes).
  4. Add diced onion and minced garlic to the skillet; sauté until onions are translucent (about 5 minutes).
  5. Stir in canned chili beans, chili powder, salt, and pepper; simmer for 3 minutes.
  6. Once sweet potatoes are done, slice them open lengthwise and fill with the chili mixture. Top with shredded cheese and return to the oven until melted.
  7. Serve topped with sour cream and sliced green onions.
