  • 4 nori sheets
  • 1/4 cup rice vinegar
  • 1 cucumber, sliced into thin strips
  • 1 avocado, sliced into thin strips
  • 1 carrot, sliced into thin strips
  • Soy sauce for dipping

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes) and let cool slightly before mixing in rice vinegar.
  2. While the rice cools, slice cucumber, avocado, and carrot into uniform thin strips.
  3. Lay out a bamboo sushi mat covered with plastic wrap. Place one nori sheet shiny side down on the mat.
  4. With wet hands, spread half a cup of sushi rice over the nori, leaving an inch at the top edge. Layer the sliced vegetables across the middle.
  5. Using the bamboo mat, roll from the edge closest to you while applying gentle pressure until you reach the exposed edge of nori; seal with water.
  6. Slice roll into bite-sized pieces with a sharp knife dipped in water. Serve with soy sauce and optional pickled ginger and sesame seeds.
