Ingredients
- 8 oz smoked salmon
- 2 medium potatoes
- 2 carrots
- 2 hard-boiled eggs
- ½ cup mayonnaise
- 2 tbsp lemon juice
- 1 tbsp fresh dill, chopped
Instructions
- Boil potatoes in salted water until fork-tender. Drain, cool, peel, and dice.
- In another pot, boil carrots until tender but firm. Drain and chop.
- Hard-boil eggs, cool in ice water, then peel and chop.
- In a serving dish, layer half of the potatoes, followed by half of the carrots.
- Add half of the smoked salmon on top, then spread half of the mayonnaise mixed with lemon juice and dill.
- Repeat layers with remaining potatoes, carrots, salmon, and mayonnaise mixture.
- Refrigerate for at least one hour before serving.
