- 1 lb small red potatoes, halved
- 3 ears of corn on the cob, cut into thirds
- 1 lb smoked sausage (kielbasa or andouille), sliced
- 2 tbsp Old Bay seasoning
- 3 tbsp olive oil
- Juice of 1 fresh lemon
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a sheet pan with nonstick cooking spray.
- In a large bowl, combine halved potatoes and sliced sausage. Drizzle with olive oil and sprinkle with Old Bay seasoning. Toss until evenly coated.
- Spread the potato and sausage mixture on the prepared sheet pan in an even layer. Roast for about 20 minutes until golden brown.
- Add corn pieces to the pan, tossing gently before returning it to the oven for another 10 minutes.
