  • 1 cup enchilada sauce
  • 1 cup bell peppers (chopped)
  • 1 medium onion (diced)
  • 1 cup shredded cheddar cheese
  • 2 tsp taco seasoning
  • 2 tbsp fresh cilantro (chopped)
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and chopped bell peppers; sauté for about 5 minutes until softened.
  2. Add ground turkey to the skillet, breaking it up with a spatula, and cook for about 7 minutes until browned.
  3. Stir in taco seasoning and enchilada sauce until well combined; allow to simmer for about 5 minutes.
  4. Reduce heat to low and sprinkle shredded cheddar cheese on top. Cover briefly until cheese is melted.
  5. Remove from heat and garnish with fresh cilantro before serving.
