Ingredients
- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 8 oz lo mein noodles
- 1 cup bell peppers, sliced
- 1 cup snap peas
- 1 cup carrots, julienned
- 3 cloves garlic, minced
- 4 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Heat sesame oil in a large skillet over medium-high heat. Add sliced chicken and stir-fry until golden brown (about 5 minutes). Remove from skillet.
- In the same skillet, add minced garlic and vegetables. Stir-fry until tender-crisp (about 3 minutes).
- Boil water in a pot and cook lo mein noodles according to package instructions (approximately 4 minutes). Drain and rinse.
- Return chicken to the skillet with vegetables. Add cooked noodles and combine with soy sauce and cornstarch mixture. Stir on low heat until well mixed (about 2 minutes).
- Serve hot, garnished with green onions or sesame seeds if desired.
