  • 2 cups jasmine rice (cooked and cooled)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup bell peppers (diced, any color)
  • 4 green onions (sliced)
  • 2 cloves garlic (minced)
  • 1 inch ginger (minced)
  • 2 tbsp soy sauce
  • 2 eggs
  • 2 tbsp sesame oil

Instructions

  1. Cook jasmine rice according to package instructions and let cool completely.
  2. Prepare ingredients by chopping bell peppers and mincing garlic and ginger.
  3. Heat sesame oil in a large skillet over medium-high heat; sauté garlic and ginger until fragrant.
  4. Add bell peppers and cook for about three minutes until tender, then stir in pineapple chunks.
  5. Mix in cooled rice and soy sauce; stir until well combined.
  6. Push rice mixture to the side, crack in eggs, scramble until cooked, then mix back into the rice.
