- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 cup shredded cheddar cheese
Instructions
- Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with 2 cups water or broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until liquid is absorbed.
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned (5-7 minutes), breaking it apart.
- Add diced onion and chopped bell peppers to the skillet; sauté for about 5 minutes until tender.
- Stir in taco seasoning, black beans, and diced tomatoes; mix well and cook for another 3 minutes.
- Fluff cooked quinoa with a fork and add it to the skillet mixture. Stir until combined.
