- 8 oz rotini pasta
- 2 cups fresh corn (grilled or boiled, kernels removed)
- 1 cup diced red bell pepper

- 1/4 cup light mayonnaise (or Greek yogurt)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cooks, grill or boil the corn for 5-7 minutes until tender. Allow it to cool before slicing off the kernels.
- Dice the red bell pepper and chop the cilantro.
- In a large bowl, combine the cooked pasta, corn, bell pepper, and cilantro.
- In a separate bowl, whisk together lime juice, mayonnaise (or Greek yogurt), chili powder, cumin, salt, and pepper until smooth.
