  • 8 oz rotini pasta
  • 2 cups fresh corn (grilled or boiled, kernels removed)
  • 1 cup diced red bell pepper
  • 1/2 cup chopped cilantro
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup light mayonnaise (or Greek yogurt)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, grill or boil the corn for 5-7 minutes until tender. Allow it to cool before slicing off the kernels.
  3. Dice the red bell pepper and chop the cilantro.
  4. In a large bowl, combine the cooked pasta, corn, bell pepper, and cilantro.
  5. In a separate bowl, whisk together lime juice, mayonnaise (or Greek yogurt), chili powder, cumin, salt, and pepper until smooth.
  6. Pour the dressing over the salad mixture and gently toss until well-coated.
  7. Cover and refrigerate for at least one hour before serving.
