  • 2 cups rotini pasta
  • 1 cup fresh corn kernels (or 1 can drained)
  • 1 medium red bell pepper, diced
  • 1/2 medium red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Cook the rotini in salted boiling water according to package instructions until al dente (about 8-10 minutes). Drain and cool.
  2. In a skillet over medium heat, sauté fresh corn for about 5 minutes until slightly charred.
  3. While the corn cooks, chop the red bell pepper and red onion into small pieces.
  4. In a large bowl, combine the cooled pasta, sautéed corn, diced veggies, cilantro, lime juice, and feta cheese. Toss gently to mix.
  5. Season with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes before serving.
