- 1/2 cup crumbled feta cheese

Instructions
- Cook the rotini in salted boiling water according to package instructions until al dente (about 8-10 minutes). Drain and cool.
- In a skillet over medium heat, sauté fresh corn for about 5 minutes until slightly charred.
- While the corn cooks, chop the red bell pepper and red onion into small pieces.
- In a large bowl, combine the cooled pasta, sautéed corn, diced veggies, cilantro, lime juice, and feta cheese. Toss gently to mix.
