  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ¾ cup granulated sugar
  • 16 oz cream cheese (softened)
  • ½ cup sour cream
  • 2 tsp vanilla extract
  • 3 medium Granny Smith apples (peeled and sliced)
  • 1 tsp cinnamon
  • ½ cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Press into the bottom of a greased springform pan and bake for 10 minutes.
  2. In a bowl, beat cream cheese until smooth. Add sour cream and vanilla; mix well. Gradually add remaining sugar until blended.
  3. Toss sliced apples with brown sugar and cinnamon in a bowl.
  4. Pour half of the cheesecake filling over the crust, layer half of the apples, then add the remaining filling followed by the rest of the apples.
  5. In another bowl, combine more graham cracker crumbs with melted butter and brown sugar for the topping; sprinkle over apples.
  6. Bake for about an hour until set but slightly jiggly in the center. Cool completely before refrigerating for at least four hours or overnight.
