  2. Wash and peel the carrots, then slice them thinly (about 1/8 inch thick) using a mandoline or sharp knife.
  3. In a large bowl, toss the carrot slices with olive oil, salt, paprika, and garlic powder until evenly coated.
  4. Line a baking sheet with parchment paper and spread the carrot slices in a single layer.
  5. Bake for 15-20 minutes, checking halfway through. Remove when golden brown but not burnt.
