- 2 large eggs

- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
- Squeeze out excess moisture from the zucchinis using paper towels.
- In a bowl, mix grated zucchini, feta, eggs, breadcrumbs, garlic powder, and herbs until well combined.
- Shape the mixture into patties about an inch thick.
- Heat olive oil in a skillet over medium heat. Cook each patty for 4-5 minutes on each side until golden brown.
- Serve warm with yogurt sauce or tzatziki.
