  • 1 lb medium to large shrimp, peeled and deveined
  • 8 corn tortillas
  • 1 cup panko breadcrumbs
  • 2 ripe avocados, diced
  • 1/4 cup freshly squeezed lime juice
  • 2 cups shredded green cabbage
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • Oil for frying (about 1 cup)

Instructions

  1. Rinse the shrimp under cold water and pat dry.
  2. In one bowl, mix panko breadcrumbs with salt and pepper. In another bowl, beat an egg for the egg wash.
  3. Dip each shrimp in the egg wash followed by coating with panko breadcrumbs.
  4. Heat oil in a skillet over medium-high heat (around 350°F). Fry shrimp until golden brown, about 2 minutes per side.
  5. In a bowl, combine cabbage, cilantro, diced avocado, lime juice, and sour cream; mix well.
  6. Warm tortillas in a skillet until pliable. Assemble tacos by adding shrimp and topping with the avocado slaw.
