  • 1 lb ground turkey or sausage
  • 1 cup shredded carrots
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups fresh spinach or kale
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. In a large pot over medium heat, heat the olive oil. Add the diced onion and sauté until translucent. Stir in the minced garlic and cook for an additional minute.
  2. Add the ground turkey or sausage to the pot and cook until browned, breaking it apart with a spatula (about 5 to 7 minutes).
  3. Stir in the shredded carrots and pour in the chicken broth. Bring to a boil, then reduce the heat to simmer for 10 minutes.
  4. Incorporate the broken lasagna noodles into the pot and cook until al dente (about 8 minutes).
  5. Add in the fresh spinach or kale and stir until wilted (approximately 2 minutes).
  6. Lower the heat further and mix in cream cheese until fully melted and combined. Sprinkle generously with Parmesan before serving.
