  • 34 boneless, skinless chicken breasts (1 lb)
  • 2 cups great northern or cannellini beans, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 cup bell peppers (red or green), chopped
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Cook chicken breasts until golden brown (about 5 minutes per side). Remove from pot and set aside.
  2. In the same pot, sauté chopped onions, bell peppers, and garlic until soft (about 3 minutes).
  3. Return chicken to the pot along with white beans and chicken broth. Stir in Cajun seasoning.
  4. Bring to a gentle boil; then reduce heat to low and simmer uncovered for 20 minutes.
  5. Stir in softened cream cheese until melted and fully incorporated. Garnish with fresh cilantro before serving.
