  • 1 cup orzo pasta
  • 2 cups fresh broccoli florets
  • 2 cups low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Instructions

  1. Boil salted water in a pot. Add orzo and cook according to package instructions (8-10 minutes).
  2. In the last 3 minutes of cooking, add broccoli florets to the pot.
  3. Drain orzo and broccoli together and return them to the pot.
  4. In a separate saucepan, heat olive oil over medium heat. Sauté garlic until fragrant (about 1 minute).
  5. Stir in broth and heavy cream; bring to a simmer.
  6. Mix in Parmesan cheese until melted. Pour over the orzo and broccoli, tossing to coat evenly.
