  • 2 cups fresh cauliflower florets
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or milk for lighter option)
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Wash and cut broccoli and cauliflower into bite-sized florets.
  2. In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (about 5 minutes). Stir in minced garlic for another minute.
  3. Add the broccoli and cauliflower florets to the pot; stir for about 2 minutes.
