Instructions
- Peel and cube the fresh pumpkin or use canned pumpkin puree.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until soft.
- Add grated ginger and turmeric; cook for one minute until fragrant.
- Stir in pumpkin cubes and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes until pumpkin is tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Return to low heat, stir in coconut milk, season with salt and pepper, and warm through before serving.
