  • 2 cups Yukon Gold potatoes (diced)

  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 carrots (diced)
  • 1 tsp thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and minced garlic; sauté until translucent (about 5 minutes).
  2. Add sliced kielbasa; cook until browned and crispy.
  3. Stir in diced potatoes and carrots; cook for another 2 minutes.
  4. Pour in chicken broth, add thyme, bay leaves, salt, and pepper; bring to a boil then reduce heat to simmer uncovered for about 20 minutes until potatoes are tender.
  5. Remove bay leaves; stir in heavy cream until heated through (about 5 minutes).
  6. Serve hot, garnished with fresh parsley or croutons if desired.
