  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 medium Yukon Gold or Russet potatoes, peeled and diced
  • 2 medium carrots, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onions, mincing the garlic, and dicing the potatoes and carrots.
  2. In a large pot over medium heat, add olive oil. Sauté the diced onion until translucent (about 5 minutes), then add minced garlic and cook for another minute.
  3. Add the chicken breasts to the pot and brown both sides (about 3 minutes each).
  4. Pour in the chicken broth and add potatoes, carrots, thyme, salt, and pepper. Bring to a boil; then reduce heat to simmer.
  5. Simmer uncovered for about 25 minutes or until chicken is cooked through and vegetables are tender.
  6. Remove chicken from the pot, shred it with two forks, and return it to the soup. Stir well.
  7. Serve hot with crusty bread or fresh herbs on top.
