- 3 medium Yukon Gold or Russet potatoes, peeled and diced
- 2 medium carrots, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Prepare your ingredients by chopping the onions, mincing the garlic, and dicing the potatoes and carrots.
- In a large pot over medium heat, add olive oil. Sauté the diced onion until translucent (about 5 minutes), then add minced garlic and cook for another minute.
- Add the chicken breasts to the pot and brown both sides (about 3 minutes each).
- Pour in the chicken broth and add potatoes, carrots, thyme, salt, and pepper. Bring to a boil; then reduce heat to simmer.
- Simmer uncovered for about 25 minutes or until chicken is cooked through and vegetables are tender.
